Pot Roast Beef Shoulder by FRED

Now this is totally inconsiderate!
Planning to do cleansing diet during the Holy Week and what do we get for lunch the day before the fast??? ROAST BEEF!

Dad planned it all along! Asked me to chop the other ingredients while he massaged the beef... My golly. Well it's super simple to prepare. Just rub the 1kg beef shoulder with:
Salt
Pepper
Italian herbs (mainly rosemary)
Brown the meat in a skillet. And wait until that ine side turns brown before turning or else it will just stick to the pan.

In a deep pressure cooker pot, we sauteed:
4 big white onions
6 cloves garlic
4 chunky sliced potatoes
3 chunky sliced carrots
In about 3 swishes of cooking oil.

But better if you take out the vegetables before putting in the beef as our turned really mushy :(

Then pour in:
3/4 cup of red wine
2 bayleaf
2 star anise
and of course, the browned meat.

Let it cook in the pressure cooker for 2hrs (take note, the top should be whistling for 2hrs). After which you turn the stove off, and WAIT for the top to come down by itself. DO NOT open the top when the pressure is still inside. Danger awaits, ok?

So then take out the sauce and make gravy, add to a skillet:
all drippings from the pot roast (half cup)
1/2 cup water with
3 tsp cornstarch, dilluted
season with salt & pepper to taste

Serve meat sliced with the vegetables surrounding it to make it look even more festive! Gravy on the side.

Best with red wine and mashed potatoes or rice.
